When Eli was still a tiny baby, my niece emailed me a piece of information
I wasn't sure I truly wanted to know -- that you can make a serving of warm chocolate cake in just five minutes. If this is dangerous information for you too, stop reading now!
Still here? Yeah. This blog post does have "chocolate" in the title.
When hot, Five Minute Chocolate Mug Cake is pretty darn good. The texture is springier than usual, yet the cake is pleasingly moist. (When it is cold, that's another story, but since it is a single serving size, who cares?) If you have any fresh berries, you can slice this cake into disks and layer it in mini chocolate shortcake fashion.
5 Minute Chocolate Mug Cake
4 tablespoons all-purpose flour
4 tablespoons sugar
4 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
Small splash vanilla extract
--Blend first three ingredients in a large coffee mug.
--Add egg and mix well.
--Add rest of ingredients and mix well.
--Microwave for 3 minutes on full power (1000 watt oven).
As the cake bakes, it will rise and then fall but will not tumble out of the cup. Cool slightly and serve either in the cup or tipped onto a plate.
See this? This is our world today. Chilly, drippy, gray mid-February.
An easy-peasing baking project and warm chocolate cake sounded just right.
Quickie phone photos, but the smile says it all.
Thanks, Erin, for sharing this recipe!
